Recipe for raspberry Cupcakes with pink frosting

 


Here's a simple recipe for raspberry cupcakes with pink frosting:


Ingredients for the cupcakes:

1.5 cups all-purpose flour
1 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup butter (melted)
2 eggs
1 cup raspberries (fresh or frozen)
1/4 cup milk
1 teaspoon vanilla extract

Ingredients for the pink frosting:

1/2 cup butter (softened)
2 cups powdered sugar
1 teaspoon vanilla extract
Pink food coloring (optional)
2-3 tablespoons raspberry jam (for flavor)

Instructions:

Preheat the oven to 350°F (180°C) and prepare a muffin tin with cupcake liners or by greasing it with butter.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In another bowl, beat the eggs with melted butter, milk, and vanilla extract. Gradually add this mixture to the dry ingredients and mix until well combined.

Gently fold in the raspberries into the batter.

Fill the cupcake liners with batter, filling each about 2/3 full.

Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

Allow the cupcakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.

To make the frosting, beat the softened butter in a bowl until creamy, then gradually add the powdered sugar and vanilla extract. If desired, add a few drops of pink food coloring and raspberry jam for flavor. Beat until smooth and creamy.

Once the cupcakes are completely cooled, frost the cupcakes with the pink frosting. You can use a piping bag or simply spread it with a knife.

Decorate the cupcakes as desired, such as with fresh raspberries or white chocolate shavings.
